What to do with diced chicken?

I’m in the middle of making dinner, and I originally was making a campbells cream of blah blah blah with noodles and diced chicken, but It really does not sound good to me, plus I’m out of Asiago Cheese which the recipe calls for..so i’m a little hesitant to make it because I’m afraid it’s gonna be really bland, and…well campbells anything really doesnt sound appetizing right now…I have the diced chicken cooking right now,
but does anyone have a pretty simple recipe, something different I can do with this diced Chicken…I normally am a really good cook, and usually can pull things off the top of my head to make, but tonight I’m lost…and hungry :P
help? I really really really wanted Thai peanut sauce with my chicken..but I’m missing an ingredient :(

I don’t actually buy parmesan, I always use asiago cheese in place of it, it gives more of a kick

You could make an Alfredo sauce for the chicken and a box of pasta, using cream or half and half or a white sauce and garlic. Sautee chopped fresh or jarred garlic in butter then add the cream or sauce and simmer. Or if you had a can of coconut milk and some curry paste or knew how to make some you could heat that into a sauce and mix with rice. I don’t know much about Asiago but I’m sure you could use Parmesan just fine.
